Lemon and Lavender Shortbread

A easy and healthy way to flavor baked goods is by using essential oils. These Lemon & Lavender Essential Oil Cookies are perfect for afternoon tea, cookie swap or holiday gift.

Ingredients

·        1 cup butter - Room Temperature
·        ⅔ cup organic confectioners sugar
·        Zest of 2 lemons - divided
·        7 drops lemon essential oil
·        3 drops lavender essential oil
·        2 teaspoons vanilla
·        ¼ teaspoon salt
·        2 cups whole wheat flour
·        2 Tablespoons raw sugar

Instructions

1.     Combine confectioners sugar, butter, vanilla, salt, zest of one lemon and essential oils 
2.      Add flour and combine until dough comes together
3.     Form into til blended well
4.     Add flour a disc and wrap with plastic wrap and refrigerate until firm - about 30 minutes
5.     Preheat oven to 350
6.     Line baking sheet with parchment paper
7.     In a small bowl combine zest of second lemon and raw sugar
8.     Roll out dough to ¼ inch thick then sprinkle with lemon zest mixture
9.     Cut into squares or circles then transfer to baking sheet
10. Bake 10-12 minutes until cookies are set. Let cool then serve.

Peppermint Black Bean Brownies

Peppermint Black Bean Brownies


TOTAL TIME: 55 MINUTES
SERVES: 9-12

INGREDIENTS:


  •      1 can 15 ounce black beans, drained
  •       ½ cup cacao powder
  •       4 tablespoon coconut oil, melted
  •       ¾ cup raw honey
  •       2 teaspoon stevia 
  •       1 teaspoon vanilla extract
  •       3 eggs
  •       ½ cup gluten-free flour
  •       ¼ teaspoon sea salt
  •       ¼ cup water
  •       3 to 4 drops peppermint DoTERRA essential

This is soooooooooooo easy!!!!!


DIRECTIONS: 

  • Blend all ingredients together in a blender or food processor for 5 min. 
  • Grease 8 x 8 pan with coconut oil 
  • Bake for 40 min. at 350 degrees. 
  • Allow to cool for 10-15 mins.
